Do you love Cafe Rio? The obsession people have with this Mexican restaurant and their fresh food options is real and my family has really missed Cafe Rio since we moved to Ohio.
While many of the copycat recipes for this Cafe Rio Salad Dressing that are floating around the internet are made with a packet of ranch dressing mix, you already know that I’m a big fan of making salad dressings from scratch.
I love my daily salads and having really great salad dressings ready to go in the fridge makes a big difference in how excited I am to eat all of those salads.
Creamy Tomatillo Dressing
Now, before we get too far into this recipe, full disclosure on this dressing. I’ve made this a few times now, both exactly as written and with a packet of ranch mix.
When made with a packet of ranch mix, it’s a near-perfect match for the restaurant dressing. Made from scratch, it’s our personal favorite, but it’s a fresher flavor than the restaurant’s dressing.
Made with fresh tomatillos and jalapeƱo, also, it is good to know that any spice added to the dressing is likely to increase in intensity the longer it rests in the fridge.
If you’re anything like my family, I highly recommend kicking up the heat with an extra jalapeno or two.
Cafe Rio Dressing Recipe
While this list might look long at first glance, the salad dressing will come together in just minutes. There’s no chopping, slicing, or dicing required.
Just toss everything together in the blender and blend until smooth and creamy. Transfer the dressing to an airtight container and let it chill in the refrigerator until ready to serve.

Creamy Tomatillo Dressing {Cafe Rio copycat recipe}
Ingredients
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup milk
- 1 teaspoon dried dill weed
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried chives
- 1/4 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon finely cracked pepper
- 1 teaspoon freshly squeezed lemon juice adjust to taste
- 1 jalapeno halved with stem and seeds removed
- 1 garlic clove
- 1 tomatillo husk removed
- 1 large handful cilantro about 1 cup loosely packed
- 1 medium lime juiced, 1-2 tablespoons – adjust to taste
