Welcome to the weekend, my friends! After a very laid-back week at Lake Ouachita in Arkansas (read more HERE), we hit the road again yesterday. We woke up this morning in Texas and we are already driving again. We’ll be in Carlsbad, NM tonight and spending the day at Carlsbad Caverns tomorrow. YAY! Then we’re headed to my mom’s house for the week leading up to our annual family campout.
I’m beyond excited to finally spend some time with my extended family again. I’ve missed them so much! With 7 siblings and their families, we make for a heck of a group anytime we gather together. The annual camping trip is something we all look forward to every year.
ON THE BLOG this week: Crisp and buttery on the outside, fluffy on the inside, homemade waffles are a breakfast (or a dinner!) for which my entire family cheers. I like sweet waffles, savory waffles, snack waffles (handheld Ham and Cheese Waffles, I’m looking at you). If you can waffle it, I will probably love it.
Creamy, rich, vanilla waffle sauce is the best possible topping for your favorite breakfasts. For my family, Waffles-with-Waffle-Sauce is a THING. I’ve never served my grandmother’s Waffle Sauce to someone who hasn’t loved it, because this sauce has the ability to make an ordinary meal extra special.
What I’m CRAVING: I’ve mentioned them more than once in the past, but it bears repeating, my friend Christi’s Chocolate Peanut Butter Cup Cookies still stand as one of the best cookies I have ever eaten. I love her recipe so very much and would dearly love to have a bag of those cookies on the road with us this week! They’re seriously loaded with peanut butter, peanut butter chips, chocolate chips, peanut butter cups, mini peanut butter cups, and major chocolate flavor.
My FAVORITE THING this week is this little fan. It stands maybe 10” tall, rotates, works on a remote, and manages to move far more air than I expected for such a tiny little fan. I have it inside the RV for the trip, but I’m fairly certain it will find a permanent home in my office after we return home.
What I’m WATCHING: The Italian Job. If you love a great heist movie, this is truly one of the best. I’ve lost track of how many times Sean and I have watched it and we watched it last night with my two youngest for the first time and they both enjoyed it. This one rates two thumbs up from all of us.
For what it’s worth, I’m actually not a big fan of the original, but the 2003 remake by Mark Wahlberg? It’s fantastic.
What I’m READING: I downloaded Bounty by Janet Evanovich and Steve Hamilton before leaving on this trip. I’ve said many times in the past that the Stephanie Plum series by Evanovich is one of my favorite quick and fun reads. Unfortunately, I just can’t get into any of the novels she’s co-writing or signing off on with other authors. This was such a dud, I ditched it just a few chapters in. I think I’m done trying any of these.
Unlike the spectacular author combo that is James Patterson and Maxine Paetro, I haven’t found any other author collaborations that thrill me. The Women’s Murder Club though? That’s a MUST read series for anyone that loves a mystery/detective/cop series. (And a huge YAY for the fact there are 21 books in the series now!)
Luckily, I have a whole stack of books waiting on my Kindle for the rest of this trip, so I’ll keep you posted. I started Four Winds by Kristin Hannah yesterday and so far, it’s a good one, albeit very different from her usual work.
