Creamy refried beans are layered with spicy ground beef, green chile, and plenty of cheese in these Cheesy Beef and Bean Burritos.
Served with Spanish Rice or Chipotle Lime Rice, Elote Dip, and some Pico de Gallo, this is a meal that everyone will enjoy.
Easy Beef Burritos
As soon as I saw these burritos in my friend Jessica’s new Beef It Up cookbook, I knew I’d be making them. Cheesy Beef Burritos? Yes, please!
I have a few other things bookmarked on my must-try list as well, but these babies? I made them for the first time the same day I received the cookbook in the mail.

I always (and I do mean always) have some of the Best Ever Taco Beef in either the fridge or freezer. So, I grabbed a package and started rolling burritos. I had a very happy family that night.
I’ve tweaked the recipe a bit for my family’s tastes and to provide directions for making the burritos with ground beef, versus with leftover beef that you may or may not have on hand.
Beef and Bean Burritos
For my crew, I like to add some roasted and chopped green chile (canned or jarred chile works great here) as well as some extra taco seasoning when cooking the beef.
I’ve also added refried beans to the burritos, but feel free to swap them for whichever beans you like best. I’ve also made these with pintos and black beans.
This burrito recipe is about as versatile as it could possibly be. Everything is completely adaptable to your tastes and the burritos turn out great every time.
Beef and Bean Burrito Recipe
- Preheat the oven to 350°F. In a large skillet, cook and crumble the ground beef. Season the meat generously with taco seasoning while cooking. Add the green chile to the meat and stir to combine.
- Scoop the can of refried beans into a medium-size bowl and smash with a spoon until smooth and spreadable.
- To assemble the burritos, spread a line of refried beans down the center of a tortilla. Top it with a spoonful of the beef mixture, shredded cheese, and a sprinkling of cilantro.
- Roll up the burrito and place edge side down on a large baking sheet. Repeat with the remaining tortillas and fillings. Bake uncovered for about 20 minutes until the tortillas are golden brown with crisp edges.
- Remove from the oven and transfer the burritos onto plates. Add your favorite toppings to the plates and serve immediately.
Want a laugh? Sean told me that these burritos remind him of old-school Taco Bell burritos, but so much better. Since I know how much he used to like those burritos, I’m taking that as a compliment.

- 1½ pounds ground beef
- ⅓ cup taco seasoning
- ½ cup roasted and chopped green chile or your favorite salsa
- 28-30 ounces refried beans
- ⅓ cup chopped fresh cilantro
- 3 cups shredded Mexican cheese blend
- 8 large flour tortillas
