Healthy Apple Fritter Baked Oatmeal

I’m am obsessed with apple fritters. I am obsessed with baked oatmeal. So I mashed the two together in a healthy apple fritter baked oatmeal and it is rockstar status!

Our first Saturday morning without an ounce of errands or unpacking and we needed a good, old fashioned family breakfast and surprisingly one of the kiddos had asked for oatmeal so obviously I had to go all out.

Oh dear, so begins another obsession. Get ready, folks because I’m about to start creating 50 different versions of baked oats recipes.

What flavor combination would you like next? So far we have a creme brulee baked oatmeal, a blackberry cobbler baked oatmeal, and two mug baked protein oatmeal recipes – chocolate chip cookie and peanut butter chocolate chip.

When we had finally settled into a new city back in August, I was dragging my feet to get cooking again. I’d barely cooked real meals all summer due to packing and now most of our kitchen stuff is in a storage unit and it’s been hard to find the motivation to get going again. But alas, I also detest not having sit down family dinners or eating out all the time, so I put on my big girl pants and totally eased into it. No jumping in when you’re exhausted from life, am I right?

What better way to ease in than to make breakfast for dinner recipes?

This healthy breakfast recipe is the perfect solution and came about from me winging it with random pantry ingredients. But my goodness, when you have both a 16 and 6 year old raving over OATMEAL you know you’ve found a winner! 

Ingredients for Apple Fritter Baked Oatmeal

In the next section, I’m going to go into how to make this simple breakfast recipe, but first thing’s first, here are the ingredients you will need:

  • Old-Fashioned Rolled Oats – old fashioned really do work the best, instant oats get too soggy and steel cut outs don’t soften up enough
  • Eggs – bind the baked oatmeal together
  • Milk – you can use any kind of milk you want
  • Apple Butter (or Unsweetened Applesauce) – apple butter adds a little extra richness and buttery flavor, but applesauce works just great too
  • Maple Syrup – pure maple syrup is preferred
  • Vanilla Extract – adds the best flavor
  • Cinnamon, Ginger, Nutmeg, Allspice – all the warm fall spices that go so well with apples
  • Salt – enhances all the flavors
  • Baking Soda – gives the baked oatmeal some rise and fluffiness
  • Golden Raisins – regular raisins will work fine too, I just prefer the flavor of golden raisins
  • Sliced Almonds (optional) – sometimes I include them and sometimes I don’t, they add some nice crunch and protein
  • Minced Dried Apples – be sure to get dried apples

For the Glaze

  • Powdered Sugar – all the sweetness 
  • Milk – increase or decrease to change the thickness to your liking
  • Vanilla Extract – flavor, of course

How to Make Apple Fritter Baked Oatmeal

I am all about the easy breakfast recipes! So there is not much to make this baked apple oatmeal recipe. Here are the steps:

  1. Prep: Preheat the oven to 375 degrees and grease a square 8×8″ baking dish.
  2. Combine: In a large bowl, combine all the dry ingredients and the milk and stir everything together. Add the vanilla and maple syrup.
  3. Stir: Add the eggs and stir them in.
  4. Fold: Stir in the raisins and apples and combine everything together.
  5. Bake: Pour everything into the prepared baking dish. Then bake the the casserole for 40-45 minutes. While it is baking, make the glaze.
  6. Whisk: For the glaze, whisk everything together in a small bowl and set it aside until it is done baking. Let the baked oatmeal cool slightly before pouring the glaze on top.
  7. Serve: Eat it warm with fresh berries, a dollop of yogurt on top or with some warm milk poured over it.

Variations

If you want to skip the glaze, you could top this baked oatmeal with a drizzle of maple syrup or honey. You could also sprinkle some nuts, like walnuts, almonds or pecans, over the top.

Baked Oatmeal Tip!

Do not use fresh apples in this particular recipe. Because we want to keep the crunchy texture on top, the fresh apples would release too much liquid. Freeze dried apples are not the same as dehydrated apples. These are similar to what I buy at our local store like Winco.

How to Make Apple Fritter Baked Oatmeal Allergy Free

This recipe is very versatile, so it’s easy to make it allergy free. To make it gluten-free, ensure that your oats are gf and you are golden.

To make it dairy-free, swap the milk in both the baked oatmeal and glaze with soy, oat, coconut or almond milk. Be sure to use applesauce rather than apple butter.

How to Store, Reheat and Freeze Baked Oatmeal

Okay, back to this baked oatmeal! If you have some leftover, it stores extremely well in the in the fridge in an airtight container for up to 4 days. My kids love eating baked oatmeal leftovers. We just pop it in the microwave to reheat it as individual servings.

Freezing baked oatmeal is also a great option. Let it cool completely then wrap it in plastic wrap and store it in a ziploc bag. I like to wrap individual servings so my kids can just grab them and warm them up themselves. It will keep in the freezer for up to 3 months. You can reheat it from frozen in the microwave for a couple of minutes.

If I’m reheating a single serving, I just use the microwave. If I am going to reheat a full baked oatmeal, then I warm it up in the oven on 325 for 8-10 minutes.

Instructions

  • Preheat the oven to 375 and grease an 8×8" baking dish.
  • In a large bowl, stir together all ingredients. Pour into a baking dish and spread evenly.
    2 Cups Old Fashioned Oats, 2 Eggs, 1 ¾ Cups Milk, 4 Tablespoons Apple Butter, 1/3 Cup Maple Syrup, 1 teaspoon Vanilla Extract, 4 teaspoons Cinnamon, Dash Ginger, Dash Nutmeg, Dash Allspice, 3/4 teaspoon Salt, 1 teaspoon Baking Powder, 1/2 Cup Golden Raisins, 1 – 1 ½ Cups Minced Dried Apples, 1/4 Cup Sliced Almonds
  • Bake for 40-45 minutes. Make the glaze.

For the Glaze

  • Whisk all the ingredients together and set it aside until the baked oatmeal is done. Let it cool slightly and then pour the glaze all over the top.
    1 ¼ Cup Powdered Sugar, 3-4 Tablespoons Milk, Dash Vanilla
  • Serve with toppings like: a little warm miIk, a dollop of yogurt, fresh berries or just plain.

Notes

Store leftovers in the fridge for up to 4 days.
